I love eating delicious food and creating deep flavors with spices.
I had this vegetable curry today for lunch. I usually take around 10 minutes-15 minutes to prepare a meal.
I create flavor by dry roasting spices, and then I add fat. I love using coconut cream as my fat source as it adds flavor and creaminess to every dish.
Onions 🧅 and tomatoes 🍅 are the basis for most curries. I chop them up and let them cook in the spices and coconut cream to form a wagar or a paste of sorts.
One thing I make sure to do when making any vegetable curry is to lightly cook the vegetables. Enzymes help us digest foods and when we over cook our veggies, these enzymes die.
I usually will add zucchini and bell peppers in at the same time and let them cook for a minute or 2 before I add in broccoli 🥦.
My favorite cuisines are Indian and Thai food because of the deep flavor profiles.
